Lets Talk About Dinner

Ive been trying to eat healthier this year, and that means I have been cooking more and eating out less. Sounds good, but it is easier said then done. I love to eat, but I don’t have the best cooking skills, so I decided to call my older sister (married with two of the cutest nephews this gal could ask for!) to see if she had any tips on what I should make for dinner. I figure she cooks for her family practically every night and might know a thing or two.
Well, it turns out she makes a meal plan every Saturday night, and then goes grocery shopping on Sundays. She figures out what she is going to make for dinner six nights of the week and on the seventh day she makes a big soup to use the leftover produce and meat from the week. Isn’t that a good idea! She also plans ahead and will make one chicken last for at least two or three meals. For example, she will roast a chicken on Sunday and then on Tuesday she will have a big chicken salad and on Wednesday she might use the last of the shreds to make chicken enchiladas. Then the bones go into that soup I was telling you about.
I loved my sister’s ideas on how to stretch a meal, and it got me thinking that not only do I have a sister I can ask about cooking, but I also have you ladies, my dear readers, who probably cook all the time! So I was wondering, what tips do you have with regards to meal planning? Do any of you cook every night? Do any of you cook all your meals on one day and then defrost?
