Saturday Do-It-Yourself – Homemade Ice Cream Cake

I love ice cream cake! That is one reason why I was so excited to see today’s Do-It-Yourself submission from jerseyswife from Walnut Grove, MS.  She makes it sound so easy I will have to try it today and surprise a special Team Swagbucks member who is celebrating her birthday today.  (shhh… don’t tell her, I want it to be a surprise)

Frozen Brownie Sundae

1 box (19.8oz) fudge brownie mix
1/2 cup vegetable oil
1/4 cup water
2 eggs
1 carton (1/2gallon) choc-chip mint ice cream slightly softened
24 Andes candies
1 jar hot fudge sauce
Heat oven to 350
Spray bottom of 13×9 pan
Mix brownie ingredients in a bowl and pour into a pan. Spread the top of the batter with spatula to make smooth. Bake the brownies for 28 to 30 minutes.  Let them cool for at least 45 minutes. When they are cool scoop the softened ice cream on top of the brownies and smooth with rubber spatula. Put in the freezer til slightly firm. Then put cool whip frosting on top. Add candies. Freeze at least 8 hours or overnight so it gets hard.
Take out of freezer 15 minutes before serving. Cut and serve.
(You can substitute any flavor ice cream and any candies)
