Saturday Do-It-Yourself: Stovetop Tuna Noodle Casserole

Who’s hungry, Swag Nation?!  In today’s DIY, we’d like to share with you a delicious recipe, submitted by LPeterson from Anderson, SC.

I’ve got a good recipe to share with you today: Stovetop Tuna Noodle Casserole. It’s perfect for days when you need a cheap and flexible recipe. Plus, it comes together in 20 minutes or less. Yay!

Ingredients:
Elbow Macaroni or other smallish pasta
1 Can Chunk Tuna (chicken also works well)
1 Can Cream of Chicken Soup
¼- ½ Teaspoon Spicy Chicken Seasoning (or your own blend, see tips below)
2 Cups canned or frozen veggies
Milk, optional
Shredded cheese, optional

Following your box’s instructions, cook enough servings of macaroni to feed your family—I usually make about 4 servings, or 2-3 cups of dry noodles. Drain noodles, but leave them in the saucepan. Stir in one 10 ounce can of cream of chicken soup. Drain the chunk tuna, then add it to the noodle mixture. Add a couple dashes of your favorite seasoning blend. If you want your casserole to feel saucier, stir in ⅓ cup of milk. Add about 2 cups of drained canned, or frozen vegetables. If you want to splurge, add ½ cup of shredded cheese. Continue to heat until the veggies are warmed through, stirring often so that it won’t burn on the bottom.
Makes about four servings.

Tips:
This recipe is easily doubled if you want leftovers or have more mouths to feed.
I sometimes use canned chicken or leftover cooked chicken breast instead of tuna.
If you don’t have cream of chicken soup, you can make your own version using a white sauce base like the one found here: http://www.tammysrecipes.com/homemade_cream_chicken_soup.
If you don’t have a Spicy Chicken Seasoning blend, substitute your favorite seasoning blend, or add in ¼ teaspoons of dried sage, rosemary, crushed red pepper, black pepper and seasoned salt.
My favorite veggies to add are frozen peas (as seen in the photo) and carrots. Green beans, corn, and cooked potatoes also work, as do cans or bags of mixed vegetables.
Just about any cheese tastes good in this. I most often use Mozzarella and Parmesan, but Colby-Jack, Italian mix, and even taco flavored mixed cheese taste great.
If you like a little warmth, add hot sauce and additional crushed red pepper to taste.
