Saturday Do-It-Yourself: Peanut Butter Granola Cookies

Posted by on Sat, September 20th, 2014 at 11:00 am

It’s a well-known fact that cookies are fantastic. For today’s DIY, we have a great recipe, from JanesGarden, of Beachwood, OH. Check it out below!

I love home made and handmade (from scratch) peanut butter cookies and since I also make my own granola, I decided to combine the two for what are the best peanut butter bars/cookies I have ever had. If you bake them for 10-12 minutes on a sheet where they have melted and formed a sheet, then they are moist, chewy bars. If you bake for about 5 minutes longer, they will become cookies. Here is the recipe and I hope you like them!

Jane’s Homemade Peanut Butter Granola Cookies

  • 1 cup Butter, softened
  • 1 3/4 cup
  • 1/4 cup Maple Syrup
  • 1 cup peanut butter
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup Reese’s Peanut Butter Chips
  • 1 cup Granola (or 3/4 cup oatmeal with 1/4 cup mixed nuts, raisins, seeds, dried cranberries or your own granola mix)

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, cream together butter, sugar, syrup and peanut butter until smooth.
  3. Beat in the eggs one at a time until well blended.
  4. Combine the flour, baking soda, and salt; stir into the creamed mixture.
  5. Mix in the granola and peanut butter chips until just combined. Drop by teaspoonfuls onto ungreased cookie sheets.
  6. Bake for 10 minutes in the preheated oven, or until just light brown.
  7. Don’t over-bake. Cool and store in an airtight container.
