TSGal Presents: Haunted Holidays

Greetings, Spooky Swagsters!

How excited is everyone about the big weekend of costumes and friends that is before us? I know I am ready!!! I have been prepping my kitchen to smell of nutmeg, sugars, pumpkins and the warmth of fall as our guests arrive and the trick-or-treaters come for their quick visits. For the grand finale of TSGal’s Haunted Halloween Party, I’ve decided that I will brew up a fresh pot of apple cider to go along with my grandmother’s recommended Oatmeal Raisin and Pumpkin Cookies.

To make the Oatmeal Rasin Pumpkin Cookies all you need is:

1 Large Mixing Bowl

1 Medium Mixing Bowl

1 Wisp/Egg Beater/Electric Mixer/Fork (Whichever tool suits your mixing desires)

1 Oven Preheated to 350

2 Lightly Greased Cookies Sheets

And for the good stuff:

2 cups all-purpose flour
1 1/3 cups quick or old-fashioned oats
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup (2 sticks) butter, softened
1 cup packed brown sugar
1 cup granulated sugar
1 cup 100% Pure Pumpkin (there are several brands this can be bought in.)
1 large egg
1 teaspoon vanilla extract
3/4 cup chopped walnuts
3/4 cup raisins

Now for the real magic:

MIX: flour, oats, baking soda, cinnamon and salt in medium bowl.

SLOWLY BEAT: butter, brown sugar and granulated sugar in large mixer bowl until light and fluffy.

ADD: pumpkin, egg and vanilla extract; mix well.

ADD: flour mixture; mix well. Stir in nuts and raisins.

SLOWLY ADD: the slowly beaten medium bowl; mixing well.

DROP: rounded tablespoons onto lightly greased baking sheets.

BAKE for 14 to 16 minutes or until cookies are lightly browned and set in centers. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Yields 48 cookies.

Estimated Times: Preparation – 30 minutes; Cooking – 14 minutes; Cooling Time – 15 minutes cooling.

And voila! We’ve got a great way to wind down for the night and prepare for a sweet night’s rest.
